Frikadellen (aka Meatballs)
If you’re looking for a hearty piece of mock meat to go with your veggies and side dishes, search no longer. Try these delicious German-style frikadellen, or flattened meatballs, made of tofu and rolls.
rolls, German style, 4 pieces
tofu (the smoky kind, extra firm), 1 block
tofu (regular, extra firm), 1 block
red onions, 2, diced
soy flour, 2 tbsp.
gluten, 2 tbsp.
water, 2 tbsp.
flour, 2 tbsp.
canola oil (a little to fry)
parsley, chopped, 1/2 cup
1. Put the rolls in a bowl and cover with water. They are meant to suck up the water, but should not swim in it – remove any excess water. Let rest for a while until they are all mushy, then mash them.
2. Crumble the tofu and mix with the mashed rolls.
3. Mix with the rest of the ingredients and knead well. The dough should be rather firm, but still a little sticky. It should stick together well – if it doesn’t, add a little more gluten (you could also use more regular flour or add some breadcrumbs here).
4. Now heat up oil in a frying pan and fry the patties. That’s it!
