Fruity Arugula Salad With Raspberry Vinaigrette

Yes, I’ll give it to you – this salad doesn’t really match the season. It’s more like a spark of summer in the cold and makes you long for long nights outside. The exotic fruitiness of mango and nectarine meets the more bitter taste of arugula. On top of that, you have yellow and red vegetables. If you feel wild, throw some walnuts on top as well!

Ingredients:
While the selection of fruits and vegetables is pretty much up to you, here’s what I used:
1 mango
1 nectarine
bell peppers, red and yellow (1 each)
cherry tomatoes, red and yellow
arugula salad

raspberries, 1 cup (fresh, but frozen should work all the same)
white balsamic vinegar, 1-2 tbsp.
canola oil, 1 tbsp.
fresh lime juice, 1 tbsp.
sugar, 1 tsp.
salt and pepper to taste

Directions:
1. Purée the raspberries in a blender. Add the balsamic vinegar, oil, lime juice, sugar, salt and pepper.
2. Chop your fruits and vegetables the way you like it.
3. On a bed of arugula, assemble the rest of your ingredients and drip some vinaigrette on top. Serve with baguette.
